Section I: Purpose of the Role

The Teppanyaki Cook is responsible for preparing and crafting all Teppanyaki in Bintan Lagoon Resort’s Japanese outlet, Miyako.

Section II: Primary Responsibilities

  1. Develop, write, test, update and follow standard recipes.
  2. Create special menus, suggest alternatives, meet specific guests' requests and interact with guests to meet and exceed their culinary expectations.
  3. Ensure food cost is managed in line with maximizing profit while delivering quality service.
  4. Train new kitchen team members.
  5. Maintain clear communications with Head Chef and Outlet Chef.
  6. Ensure management of the kitchen efficiently and effectively.
  7. Relay all guest comments both positive and negative.
  8. Engage with guests.
  9. Verbally explain processes of history, preparation and cooking techniques to guests while cooking.
  10. Prepare all Teppanyaki ingredients including starches, vegetables, trimming and cutting of proteins

Keahlian dan keterampilan yang dibutuhkan

Education & Professional Qualifications: 

  1. Minimum 1 year of Teppanyaki experience.
  2. Minimum 2 years of culinary experience with Asian influences.
  3. Recognized Diploma or Specialized in Hospitality, Food & Beverage or other related major disciplines.

Skills & Knowledge:

  1. Cheerful and engaging.
  2. Strong interpersonal and communication skills. Must be fluent in both verbal and written English.
  3. Ability to captivate guests by cooking “on stage”.
  4. Strong knowledge of Teppanyaki-style cooking philosophies and principles.
